You know casseroles are a LIFE SAVER with the family. Holy Moly they make my life easier. And the GREAT thing about this PARTICULAR casserole is it's HEALTHY. It's a casserole from the cookbook
Paula Deen & Friends.
One of the main ingredients is broccoli. Now I hear you saying "but my kids aren't gonna eat that!" I bet they will eat THIS. Since the first time I made this my family has gobbled it up like it was Thanksgiving dinner. It was so quiet as they lapped it up I finally asked "Is it good?" And I got muffled "Mhmmm's..." and then more silence. So I made it again. And again.
It's creamy, it's a lil salty crunchy on the top from the crackers and oh so good.
The other great thing is it's so VERSATILE.
You can either serve it as a side with chicken, salmon or pork chops or add chopped up chicken TO it and make it a whole meal! That's a winner!
This is one of my favorite cookbooks, Paula Deen & Friends, it's marvelous. So many great recipes.
Next two recipes on my list I want to try are the Spinach and Bacon Quiche and Green Chile Corn Muffins.
I can't wait!
I had this whole casserole made in 45 minutes.
I put everything together, and popped it in the oven to bake for 35. And we had dinner! This is one of our family favorites and doesn't last long in our house. I never have to stress about storing that big casserole pan in the fridge and it taking up valuable real estate because it's gone in a few days... yet that frees me up from cooking on those busy week nights of must do's.
This casserole would be PERFECT with a side salad, some fruit cocktail for summer nights.
For winter evenings, this would be amazing with baked chicken or a side to a ham or pork loin.
Definitely a must try for your family... you won't regret it!
